Chef Jorge Flores Joins Costeaux and Plans for Pop-Up Dinners Starting February 14

Healdsburg, Calif. – January 31, 2023 – Costeaux is pleased to announce the appointment of a new Chef, Jorge Flores. Flores joins the culinary team to provide leadership with the day-to-day operations, catering, on-site event menu creation, and unique pop-up dinners. In conjunction with his announcement, Flores releases a new menu for the bakery café celebrating its 100th year.  He also shares his menu for the first pop-up dinner on February 14 – Olive You, Costeaux.

“Jorge was clearly the right choice for us. We were familiar with his incredible work at Campo Fina,” says CEO Will Seppi.  “His commitment to the community, during the time he served as a board member for Corazon Healdsburg and beyond, is a clear indicator he mirrors our company values.”

Flores brings his seasoned expertise after a tenure at Campo Fina, and his previous experience at other Sonoma County favorites including but not limited to the Bear Republic, Jackson Bar & Oven, and French Garden. He has a proven track record for successfully elevating culinary experiences while he consistently pushes himself to learn more.

“It’s one of those things that make you learn why places are successful,” says Flores. “It is the consistency. Everything has to be dialed in, tasted, and precise.”

Costeaux guests instantly fell in love with Flores’ Short Rib Hash specials. They savored the burger variations on the special menu as well. These trials allowed Flores to get to know the new team and continue building a connection with the community through new culinary dishes including a vegan dish called the Chela Bowl, a Fingerling Potato entrée with chorizo, and Chilaquiles.

“People can look forward to exceptional seasonal dishes that feature local produce. We are a local bakery, it is only right!” says Flores.
