LITTLE SAINT HEALDSBURG OPENS THE SECOND STORY - 100% plant-based Little Saint Opens Elevated Dining Concept Upstairs
June 26, 2023
Little Saint is excited to open The Second Story, an elevated dining concept upstairs at Little Saint in Healdsburg, California. Executive Chef Stu Stalker’s multi-course menu will highlight the seasonal ingredients available at Little Saint Farm and the surrounding area, and it will change based on availability. Differentiating from the downstairs all-day cafe and lounge, The Second Story features a set menu with consciously sourced wine, low-alcohol, and no-alcohol beverage options as well as wine, and cocktails a la carte.
Executive Chef of The Second Story Stu Stalker created a multi-course menu featuring natural
and intentionally crafted dishes. The Second Story does not shy away from imperfection but
rather embraces the honesty of what The Farm has provided. The plant-based menu blends
familiarity with discovery, drawing from the globally-influenced ingredients of the Little Saint
pantry, focused on creating a culinary experience that is both serious in its food quality and
playful in its approach. The multi-course menu is priced at $120 per guest, excluding gratuity.
The Second Story offers a wine pairing, a low-alcohol, and a non-alcohol pairing option for $65
each, with cocktails and wine available a la carte in addition. The wine program upstairs at The
Second Story is more adventurous than the downstairs all-day cafe and lounge with more
cutting-edge wine solutions like drought-resistant grapes, unique co-ferments, and non-traditional
packaging. The 500+ bottles in Little Saint's award-winning wine list will be available for guests to
enjoy in addition to the pairing offerings. Executive Wine Director Alexandria’s Sarovich’s team of
dedicated wine professionals will be taking each guest through an elevated service experience.
The beverage program at The Second Story is an active collaboration between Little Saint Farm,
the bar, and the kitchen, with a focus on minimizing waste. It strives to celebrate the mission of
sustainability at Little Saint by creating "closed loop cocktails," in which ingredients are reused
creatively from the farm to the kitchen to the bar. The menu features creative interpretations of
classic cocktails, utilizing imperfect produce, already used items normally deemed “waste,” as
well as items that may not be visually appealing but contribute to exceptional flavors. The
presentation is intentionally minimal yet deeply thoughtful while highlighting carbon-neutral and
organic producers and distilleries. The non-alcoholic pairings at The Second Story incorporate a
variety of offerings, such as cocktails, tonics, ferments, nods to herbalism, and innovative
ingredients like tepache made from carrot skins.
Led by Executive Pastry Chef Baruch Ellsworth, The Second Story's pastry program showcases
plated desserts that demonstrate the team's capabilities, creativity, and technical skills. Drawing
from their fine dining backgrounds, the team seizes the opportunity to exhibit their expertise in
crafting exquisite plated desserts. Guests can expect Executive Pastry Chef Baruch Ellsworth's
favorite dishes that emphasize the seasonality of The Farm, ensuring that the desserts
incorporate fresh and locally sourced ingredients.
“The Second Story is physically located on the second story of Little Saint and offers a distinct
dining experience from the downstairs all-day cafe and lounge, with a diverse environment that
celebrates an elevated menu, music, and art using Little Saint’s natural architecture,” shares
owner Laurie Ubben. “We are excited to have a space upstairs that inspires the staff to
continuously innovate and deliver exceptional culinary experiences through a changing seasonal
menu. The Second Story is dedicated to making choices that benefit our bodies, the
environment, and the community, promoting sustainability and well-being of our guests.”
